Amy manages many of the behind the scenes operations it takes to make Folkart run. Whether she’s running payroll or working with a local vendor, Amy brings the same passion to managing our business that we bring to serving our guests.
Prior to joining Folkart, Amy was a pastry chef at Charlie Trotter’s, where she worked under Matthias.
Amy has B.A.s in business and graphic design from Valparaiso University and graduated from The French Pastry School in Chicago.
When she’s not helping to keep Folkart running, Amy can be found baking or gardening.
