Gideon Sweet is a West Loop bar and restaurant by longtime friends Chef Matthias Merges and Chef Graham Elliot. We focus on internationally inspired cocktails, spirits and cuisine served naschen style, with a rotating selection of plates passed around the room for a high energy, interactive dining experience.
Gideon Sweet’s menu was inspired by our favorite flavors at home and abroad. We wanted to highlight the cuisine and ingredients we love most, that we think you’ll enjoy too. We serve small plates meant for sharing and tasting, along with daily specials featuring the freshest market ingredients.
Our bar program was created by nationally acclaimed bartender and friend Alex Bachman, with a focus on thoughtfully executed, nuanced cocktails. We also serve a “small pour” menu of refined shots, an ideal way to taste more spirits and creative combinations. For the back bar, we partnered with Alex’s company, Sole Agent, to offer a highly curated list of rotating rare and vintage spirits.
In warmer months, Gideon Sweet offers two patios for al fresco dining. The front patio taps into the energy and excitement of Randolph Street, while the brick-lined back patio offers a more intimate outdoor space.
