Folkart Restaurant Management is a craft-driven hospitality group led by Chef Matthias Merges. Founded in 2010, the conceptually diverse organization includes Hyde Park neighborhood eatery A10, award-winning cocktail bar Billy Sunday, Wrigley Park beer pub Lucky Dorr, craft brew house Old Irving Brewing and nationally acclaimed yakitori Yusho. A collaboration between Planted Chicago and Folkart Farm provides local, sustainable produce for the restaurants and supports urban agriculture. In partnership with renowned design firm fcSTUDIO, Folkart creates uniquely detailed bar and restaurant spaces rich in color, texture and artistry.
