Our Projects

A favorite of both long-time south siders and the faculty, staff and students at University of Chicago, A10 serves up a variety of handmade pastas, such as bucatini with guanciale, rigatoni in a beef bolognese, wild-caught, hearth-fired salmon with swiss chard and hearty bone-in pork chops as well as delicious desserts like our chocolate pot de crème.

Billy Sunday

Already a Logan Square institution, Billy Sunday serves up an impressive mix of classic cocktails, adventurous new creations and a large library of vintage spirts, all paired with a surprisingly robust food menu.

Gideon Sweet

Gideon Sweet is a West Loop bar and restaurant by longtime friends Chef Matthias Merges and Chef Graham Elliot. We focus on internationally inspired cocktails, spirits and cuisine served naschen style, with a rotating selection of plates passed around the room for a high energy, interactive dining experience.

Lucky Dorr

Who said you can’t have a beer garden featuring one-off beer collaborations with some of Chicago’s best craft brewers and a selection of amazing snacks from Chef Matthias Merges just steps from Wrigley Field? We hope nobody, because that’s what Lucky Dorr brings to the Park at Wrigleyville.

Mordecai is a bi-level bar and restaurant located inside the Hotel Zachary in the heart of Wrigleyville. Created by Chef Matthias Merges of Folkart Restaurant Management, the cocktail-centric space features one of the country’s largest selections of rare and collectible spirits. Guests can enjoy limited edition pours and classic drinks, ideal for game day celebrations or cocktail-fueled evenings. A full menu offers refined, American-inspired bar fare and grilled entrees.

Old Irving Brewing

Whether it’s a Tuesday family supper, Friday with friends or Sunday brunch, Old Irving’s focus on craft beer and delicious eats fits the bill. With our soul firmly planted in the rich food and beer traditions of the northwest side, our wood-fired grill sets the tone for the menu featuring slow roasted chickens, hanger steak with classic frites and grilled salmon.

Walk into Yusho in Chicago’s uber-hip Logan Square neighborhood and you’re immediately surrounded by the sounds of shaking cocktails and the smells of the binchotan grill wafting through the air.

FOLKART MANAGEMENT is a craft-driven hospitality group led by Chef Matthias Merges, focused on operational excellence, state of the art design and a deep-seated commitment to locally sourced ingredients.
